Vinifcation: Maceration: cold, on the skins; Decanting: cold, static; Fermentation: 12 days in stainless steel vats
Élevage: on fine-grained lees for 6 months
Ageing: in the bottle for a further 2 months
Tasting notes: bright straw-yellow colour. The scent reminds of breadcrust, acacia blossoms and ripe tropical fruits. The vinification in white, the almost complete absence of sulphuric acid and the surveillance of the temperature of fermentation result in a fruity, complete and fascinating wine of elegant freshness
Accompaniment: starters, ham and fresh cheese, fish, white meat, eggs and vegetable-stews
